Seasonal Strawberries and Local Honey
Ingredients
1 cup milk
2 eggs
1/2 tsp sea salt
6 tbsp flour
2 cups ricota
2 tbsp honey
grapesee oil
4 cups strawberries
Directions:
- In a bowl whisk together milk, eggs & salt
- Add lour 1 tbsp at a time until batter is smooth & has very thin pancake batter consistency
- Heat crepe pan & brush with oil
- Pour in small amount of batter to form thing crepe
- When golden flip & cook other side
- Transfer crepes to a platter & set aside
- Cream together honey & ricotta
- Fill crepes & form into rolls
- Top with fresh strawberries & serve
