Green tomatoes – sliced



Garlic minced


Sweet or hot red peppers (salted separately)

Vegetable Oil


  1. Wash and slice tomatoes into strips
  2. Salt and spread out in a tray
  3. Add weight on top for 24 hours
  4. Rinse well, squeeze and place back in tray
  5. Add 2 parts water and 1 part vinegar
  6. Add weight on top for a further 24 hrs
  7. After 24 hrs spread out on a tea towel and allow to rain well (may have to pat down)
  8. Place on a bowl, add oil, garlic and oregano and peppers if desired
  9. Mix well, place in jars, top with more oil, seal and store in cool place
