Ingredients
1 onion
1 tbsp extra virgin olive oil
2 cups strained tomatoes
2 cups cooked squash
4 cups water
1/4 tsp nutmeg
1/2 tsp salt
2 tbsp pecorino cheese
1/4 cup 10% cream
1 tbsp butter
Directions:
- Saute chopped onion in oil until translucent
- Stir in tomatoes & let simmer 10 min
- Add mashed squash (or pumpkin)
- Add water & remining ingredients
- Transfer to a blender
- Blend until smooth
- Return to stove to heat & serve
