Ingredients

1 onion

1 tbsp extra virgin olive oil

2 cups strained tomatoes

2 cups cooked squash

4 cups water

1/4 tsp nutmeg

1/2 tsp salt

2 tbsp pecorino cheese

1/4 cup 10% cream

1 tbsp butter

Directions:

  1. Saute chopped onion in oil until translucent
  2. Stir in tomatoes & let simmer 10 min
  3. Add mashed squash (or pumpkin)
  4. Add water & remining ingredients
  5. Transfer to a blender
  6. Blend until smooth
  7. Return to stove to heat & serve
