Ingredients

12 asparagus spears

2 tbsp extra virgin olive oil

1 cup water

1 onion

1/2 tsp sea salt

1/2 tbsp butter

1/2 cup parmesan cheese

Directions:

  1. Wash asparagus, cut off tips
  2. Cut stems into 1″ pieces
  3. IN a pot blanch tips in water
  4. Remove tips and set aside
  5. Add oil, salt & onion to the asparagus water
  6. Cook approx. 5 min
  7. Add asparagus stems
  8. Cover and steam additional 5 min
  9. Tun off heat, add butter & cheese
  10. Transfer to a blend & blend until smooth
  11. Garnish with asparagus tips
