Ingredients
1/4 cup butter
1 tbsp olive oil
4 medium onions, thinly sliced
1/2 tsp sugar
2 tbsp flour
3 1/2 cups beef stock
Salt & pepper
Bread slices
1 garlic clove, halved
1 cup shredded gruyere cheese
2 tbsp brandy
Directions:
- Heat butter & oil in saucepan and sauté onions for 20 mins covered
- Stir in sugar & cook uncovered until onions are golden brown
- Stir in flour, cook 1 min, stir in beef broth, season with salt and pepper and bring to a boil. Simmer for 20 min
- Preheat broiler, rub bread with garlic, broil one side until golden. Turn over and sprinkle with cheese and broil until golden & bubbly
- Stir brandy into soup
- Serve soup in bowls with bread on top
