1/4 cup butter

1 tbsp olive oil

4 medium onions, thinly sliced

1/2 tsp sugar

2 tbsp flour

3 1/2 cups beef stock

Salt & pepper

Bread slices

1 garlic clove, halved

1 cup shredded gruyere cheese

2 tbsp brandy


  1. Heat butter & oil in saucepan and sauté onions for 20 mins covered
  2. Stir in sugar & cook uncovered until onions are golden brown
  3. Stir in flour, cook 1 min, stir in beef broth, season with salt and pepper and bring to a boil. Simmer for 20 min
  4. Preheat broiler, rub bread with garlic, broil one side until golden. Turn over and sprinkle with cheese and broil until golden & bubbly
  5. Stir brandy into soup
  6. Serve soup in bowls with bread on top
