Ingredients
2 cups ricotta
1 egg
3 cups crepe batter
1 batch “Classic Pasta Sauce” – see recipe
1 cup grated parmesan
Directions:
- Combine ricotta & egg
- Stir in 1/2 cup of the cheese until creamy
- Prepare a double batch of crepe batter
- Prepare “Classic Pasta Sauce”
- Coat the bottom of a baking dish with little sauce
- Fill each crepe with 2-3 tbsp of ricotta mixture
- Form into a roll & place into baking dish
- Top cannelloni with desired amount of sauce
- Sprinkle with remaining cheese
- Bake at 350 F for 20-25 min
- Let rest 5 min & serve
