Ingredients
2 lbs soaked cod fish
1 large onion
2 tbsp extra virgin olive oil
1/4 cup white wine
3 large potatoes wedged
1/2 cup olives
1 tbsp capers
28 oz of diced tomatoes
1 pinch sea salt
4 sprigs of parsley
Directions:
- Soak cod in refrigerator submerged in water for 3 days
- Change water 1-2 times daily
- After 3rd day it is ready to prepare as follows:
- Cut fish into 6-8 similar sized pieced
- Cut onion into wedges
- In a large pan saute onion 2-3 min in oil
- Add cod fish & white wine
- Let cook additional 2-3 min
- Add potato wedges, olives, capers & tomatoes
- Add salt to taste
- Transfer to baking dish
- Bake at 375 F for 40 min
- Gently stir & bake an additional 20 min
- Add chopped parsley, drizzle of olive oil & serve
