Ingredients

2 lbs soaked cod fish

1 large onion

2 tbsp extra virgin olive oil

1/4 cup white wine

3 large potatoes wedged

1/2 cup olives

1 tbsp capers

28 oz of diced tomatoes

1 pinch sea salt

4 sprigs of parsley

Directions:

  1. Soak cod in refrigerator submerged in water for 3 days
  2. Change water 1-2 times daily
  3. After 3rd day it is ready to prepare as follows:
  4. Cut fish into 6-8 similar sized pieced
  5. Cut onion into wedges
  6. In a large pan saute onion 2-3 min in oil
  7. Add cod fish & white wine
  8. Let cook additional 2-3 min
  9. Add potato wedges, olives, capers & tomatoes
  10. Add salt to taste
  11. Transfer to baking dish
  12. Bake at 375 F for 40 min
  13. Gently stir & bake an additional 20 min
  14. Add chopped parsley, drizzle of olive oil & serve
