Ingredients

2 medium size zucchini

1 pkg of Italian sausage (3 links)

1 medium onion , chopped finely

1/2 cup cherry tomatoes cut in quarters

1/3 cup chopped parsley

1 cup rice cooked al dente

1 cup shredded mozzarella/parmesan, divided

3 tbsp extra virgin olive oil

1/3 cup crushed tomatoes

2 cloves garlic – minced

Directions:

  1. Preheat over to 400F, cook sausage in skillet & set aside
  2. Cut zucchini in half & scoop out pulp
  3. In same skillet, heat olive oil & cook onions & garlic until tender
  4. Add sausage to skillet & rest of of ingredients, including pulp, season with salt & pepper
  5. Stuff the zucchini & sprinkle with half the cheeses
  6. Bake for 30-35 min
