Ingredients

2 large sweet potoatoes

2 eggs

2 egg yolks

2/3 cup sugar

1/2 tsp salt

1 tsp ground cinnamon

1/4 tsp ground ginger

1/4 tsp freshly grated all spice

1 1/4 cup half & half cream

Directions:

  1. Bake sweet potatoes for 1 hour @ 350 F or until soft, peel & puree in food processor or blender
  2. Preheat over to 350 F & put rack @ lowest level
  3. Scrap potatoes into bowl & whisk in egg & yolk
  4. Whisk in remaining ingredients in order & whisking smooth between each addition
  5. Pout filling in prepared pie crust
  6. Bake for one hour
