Seasonal Strawberries and Local Honey

Ingredients

1 cup milk

2 eggs

1/2 tsp sea salt

6 tbsp flour

2 cups ricota

2 tbsp honey

grapesee oil

4 cups strawberries

Directions:

  1. In a bowl whisk together milk, eggs & salt
  2. Add lour 1 tbsp at a time until batter is smooth & has very thin pancake batter consistency
  3. Heat crepe pan & brush with oil
  4. Pour in small amount of batter to form thing crepe
  5. When golden flip & cook other side
  6. Transfer crepes to a platter & set aside
  7. Cream together honey & ricotta
  8. Fill crepes & form into rolls
  9. Top with fresh strawberries & serve
