Ingredients

2 cups ricotta

1 egg

3 cups crepe batter

1 batch “Classic Pasta Sauce” – see recipe

1 cup grated parmesan

Directions:

  1. Combine ricotta & egg
  2. Stir in 1/2 cup of the cheese until creamy
  3. Prepare a double batch of crepe batter
  4. Prepare “Classic Pasta Sauce”
  5. Coat the bottom of a baking dish with little sauce
  6. Fill each crepe with 2-3 tbsp of ricotta mixture
  7. Form into a roll & place into baking dish
  8. Top cannelloni with desired amount of sauce
  9. Sprinkle with remaining cheese
  10. Bake at 350 F for 20-25 min
  11. Let rest 5 min & serve
