Ingredients
1/2 onion finely chopped
2 tbsp extra virgin olive oil
3 San Marzano Tomatoes
A pinch of sea salt
2 eggs
2 tbsp mozzarella cheese
1 tsp dried oregano
Directions:
- Saute’ onions in oil until translucent
- Add tomatoes mashed with a fork
- Let simmer 5 mins $ transfer to baking dish
- Create 2 pockets in the sauce with a spoon
- Drop 1 egg into each of the pickets
- Bake at 350 F 6-19 minutes to your taste
- While piping hot add cheese thinly sliced or grated
- Sprinkle with oregano and serve
