1/2 onion finely chopped

2 tbsp extra virgin olive oil

3 San Marzano Tomatoes

A pinch of sea salt

2 eggs

2 tbsp mozzarella cheese

1 tsp dried oregano


  1. Saute’ onions in oil until translucent
  2. Add tomatoes mashed with a fork
  3. Let simmer 5 mins $ transfer to baking dish
  4. Create 2 pockets in the sauce with a spoon
  5. Drop 1 egg into each of the pickets
  6. Bake at 350 F 6-19 minutes to your taste
  7. While piping hot add cheese thinly sliced or grated
  8. Sprinkle with oregano and serve
